College Station’s newest food truck serves up late night snacks all day long.

The Deaux Co. rolled onto the College Station foodie scene on August 2 and serves up scratch made snacks with a South Louisiana spin.

Married couple Sarah and Garrett Thomas opened the The Deaux Co. less than two months after they first dreamed up the food truck.

“We just kind of went for it full throttle,” Sarah said. “It really came together probably from start to finish, execution-wise, probably in a month and half to two months.”

Sarah, a Louisiana native and longtime Texas transplant, missed the food of her yesteryears and what began as a longing turned into an idea, which turned into a food truck that the couple said keeps them close despite their busy schedules. Garrett owns a livestock marketing business and Sarah works full-time at a local private school.

“I think we surprised each other on how effortless it was for the two of us to come together and share the same vision,” Sarah said. “This has been fun for us to share some time together and I think we’ve really enjoyed it.”

Though the menu be but little (it boasts only three items) it is fierce . . . fiercely fried, that is. The Deaux Co. offers up guilty pleasures like its Boudin Balls, pork hand-rolled in panko bread crumbs and served with remoulade sauce; The Deaux Cone, oversized waffle cone coated with chocolate sprinkles, stuffed with made-to-order beignet fritters and drizzled with Nutella; and chicken n’ Waffles, homemade mini-Belgian waffles paired with crispy hand-battered chicken strips and served kabob-style with syrup.

Night owls and fried food aficionados can dine at this drool-worthy addition to the college station foodie scene Thursday through Friday from 6 p.m. to 11 p.m., on Saturday from 11 a.m. to 2 p.m. and 5 p.m. to 11 p.m., and on Sunday from 11 a.m. to 2 p.m.
